Walnuts are wonderful because they are full of antioxidants, healthy fats, and the mineral magnesium. In addition to benefiting the brain, walnuts help to support heart health, lower blood pressure, and reduce the risk of other diseases. Try adding walnuts to your oatmeal or cereal, or enjoy them with some dried fruit as a healthy snack.

Wacky Walnut Balls

1 cup chopped dates or raisins
1 cup walnuts
*Hemp seed, unsweetened shredded coconut or cocoa powder

In a food processor, mix the fruit and walnuts until they become a solid mass. Remove from processor and roll into small balls. Let cool and firm in the refrigerator for about an hour. If desired, roll in shredded, unsweetened coconut, cocoa powder, or hemp seeds before serving.

Winning Walnut Butter

16 ounces walnuts
*2 tablespoons honey or maple syrup (optional)
1 teaspoon cinnamon

Preheat oven to 350 degrees. Spread nuts on a baking sheet and bake for 8-12 minutes, checking on the nuts frequently to stir/move them around and make sure they don't burn. Remove from oven and cool completely. Place cooled nuts, honey, and cinnamon into a food processor and process until the mixture is smooth, stopping frequently to scrape down the sides. *Don't worry if it takes a little while to achieve the desired consistency. You can also add a little water to thin the butter if you'd like. Enjoy on apple slices, whole grain bread, or anything else! Extra walnut butter will last for up to a few months if kept refrigerated and stored in a covered container.

*Honey should never be given to babies under 12 months of age.
