March: Berries


Nutrient-rich berries are some of the absolute best sources of antioxidants, powerful compounds that help us to avoid getting sick. There are several powerful antioxidants that appear in berries, including one you might have heard of—vitamin C! Not only are berries delicious, they are also packed with fiber, which helps us to keep the digestive system working well and promotes heart health.

Berry Tasty Sorbet

Berry Tasty Sorbet

1 cup mixed frozen berries of choice
1 frozen banana
1 teaspoon vanilla extract
1 peeled, seedless orange or 2 peeled clementines
1 teaspoon ground flax or chia seeds

Blend orange until liquid. Gradually add the frozen fruit, the vanilla, and flax until you achieve a sorbet- like consistency.

Berry-licious SaladBerry-licious Salad

5 cups chopped baby spinach or spring mix
1/2 cup fresh blueberries
1 cup strawberries, hulled and thinly sliced
1 tablespoon honey
2 teaspoons honey mustard
1/4 cup balsamic vinegar
1/2 cup raw pecans, toasted (you can also drizzle with maple syrup when toasting to candy them)

In a large bowl, toss greens with blueberries and strawberries. In a small bowl, whisk together honey, honey mustard and vinegar. Drizzle dressing over salad and sprinkle with toasted nuts. Enjoy!
