Red Peppers
Did you know that red peppers have more vitamin C than orange, yellow or green peppers? They're also a great source of vitamins A and E, as well as folate and potassium. In addition to these nutrients, peppers are a good source of antioxidants—powerful compounds that help protect us from disease.
Red Pepper Roll-Ups

Ingredients:
1 sprouted or whole grain tortilla
2-3 Tablespoons hummus
Sliced red peppers (and any other sliced veggies you like)
A leafy green
Instructions:
Wash and slice the vegetables and shred the leafy green. Spread wrap with hummus. Pile on all the
veggies you like, as well as the shredded leafy green. Roll up the wrap length-wise and cut it into
sections. Eat and enjoy!
Red Pepper Rafts

Ingredients:
1-2 red peppers
Guacamole or salsa (or any other healthy dip)
Instructions:
Wash peppers and slice into "rafts" so that they hold the healthy dip. Spoon the dip into the peppers
and enjoy!
